For Dreamcast you can do this:
- go to retroarch setting during the game (Hotkey+B )
- go to options
- set internal resolution to 1280x960 or higher
- set threaded rendering to enabled
- resume game
- exit game and relaunch
For N64 it should be the same way (but maybe you have to change the Emulator/Core before in EmulationStation Menu, Games, Advanced, N64)
For Gamecube and Wii just press F1 when in EmulationStation Menu and then navigate to Applications, Dolphin Config and then you under Graphics you can increase resolution.
For PS2 it is the same way (F1, Applications PCSX2 Config)
For PSP, just press Hotkey + B while in game and go to Settings
