I looked at my Missing BIOS in game menu in a default state, I seen that Atari 800 is not reference exactly, it is covered under Atari 5200 and the stock default setup.
If you look under your Atari 5200 Missing BIOS you will see a number and by default it says 5 which is the 4 to play Atari 800 roms and 1 that Atari 5200 needs.
If the entry is missing that would mean you have all the BIOS your requested to use.
I checked on 5.27.2 and my freshly created one has the BIOS entry showing missing all 5 BIOS
Also it says Atari 5200 / Atari 800, unlike the 5.25 which only list Atari 5200
On 5.25, and 5.27.2, took me a bit to work it on 5.27.2 I am having issues with version above 5.25
Try to play a rom under Atari 5200 and it only showed black screen on 5.25 and on 5.27.2 it told me to get a real AtariOS for both zip and unzipped
My extensions were the same as yours and I wrapped them in zip
I tried Atari 800 zip and unzip and it told me in a blue screen that said I need a real Atari OS
Not exactly what you got, but if I use the BIOS for my 2 systems all my games play perfect
But, now I also want to point one thing out which is not often mentioned, it is only stated to reimage setup always.
Not all roms are created equal.
Unless you dump the rom your self, and all should and do it legally and where it is able to be done legally.
Getting roms from “some where” it may be a bad dump or it was dumped perfectly but modded or messed up some how.
Also only as a note, the most extremely rare thing I find is extensions on files sometimes affect emulator ability to play even if it supports a certain thing.
I hear this is common when running Commodore emulators, like ipf or lha or crt extensions
I only point this out because it is not mentioned but in your case your Atari 5200 and Atari 800 uses a typical extension that works a52 and atr
Only real thing I am confused by is you say you unpack rom plays fine, but you say black screen if your lucky

When you say black screen or cartridge version are you talking about the video or Rom game selection screen, where you choose a game
which is inside of when you pick the Atari emulator form the list of different game consoles on the main page?

Okay as a run down on the summary
You say your BIOS entries are missing which means you have the BIOS for both Atari 5200 and Atari 800
But you should check not just any Atari ensure it is Atari 5200 and 800 because other Ataris exist there
But if they are all missing that means you have them all, I would say.
So BIOS not your problem.
Some games work when unzip

Games allow you to pick different “versions” inside of them after you select them
again I think these are multi-game roms.
I can only guess that you have games and your talking about games that offer more than 1 game inside of a rom.
That does happen sometimes you will find 2, 4, or even 64 in 1 catridges or roms.
When I am speaking about games I am only talking about your Dig Dug or 1 game choices per catridge that can sometimes be extended to other games that may not work.
It is hard to talk about games inside of games or from what I can tell how you put it cartridge versions inside of roms
But again not all games are created equal even if it is unpacked and you could get good or bad games if things are sourced from somewhere on the internet.
It is hard to know if you have a good version of a game or dump unless you perform it your self as I mentioned.
If we stick to your extraction problem, it would be best to see if other systems have same problem on your system.
If other systems cannot play games that are in a zip or 7z then I would re-image or re-write Batocera
Something obviously went wrong durig creation, that broke something.
Or better if you have a spare flash drive try re-flashing it to test it on and boot that up before nuking your current setup
But I bet a re-flashing of Batocera would show a cure to this. If it is an extraction issue, if it is a gmae chossing issue from your multi-game roms that is liekly a rom issue that is not 100% good. Becuase most multi-game roms if gotten form the internet are unlicensed even when they were made physcially for whatever system.

sorry long post but it seems your post now has a couple issues that seem different form original post, which was about extraction, but i bet we are using different language to describe things here which is where confusion is happening.
