UPDATE: I was able to figure it out myself!
1. Open up batocera.conf in the userdata/system folder (found in the share partition) using whatever text editor you use (make sure you have administrator privileges to make the necessary changes).
2. With the file open, search for system.timezone. When you find it, uncomment the option (delete the # sign in front of system.timezone) and enter the correct timezone for your location. Here are some examples:
system.timezone=America/Fort_Wayne
system.timezone=Australia/Melbourne
system.timezone=Pacific/Honolulu

3. Save the file and close the text editor. Depending on how you edited the file, if you connected to your device through a program like PuTTY to make the changes, reboot the device; if you connected your microSD/SSD externally to your computer, plug the card/drive back into your device and boot it up.
4. Press Start to open up the menu. Select Network Settings, then turn on Enable WiFi. When you finish entering your SSID and key, go Back to the main menu and select Network Settings again. If you did it correctly, your IP Address will be displayed and Internet Status as Connected. If not, restart your device again to save the changes.
You should now be connected to the internet using wi-fi!
