i add splashscreen on PC (x86_64) 5.10 i do
mount -o remount,rw /
mount -o remount,rw /boot

do any modification

if you reboot, the modifications are lost,

except if you saved them via

/recalbox/scripts/recalbox-save-overlay.sh
but mounting /dev/loop1 on /overlay/saved failed ?

you don't need to type mount -o remount,rw / and mount -o remount,rw /boot
can you show the full error whileit is not supposed to happen.

i try with out type mount -o remount,rw / and mount -o remount,rw /boot
no error after reboot it not save the modifications
it try /recalbox/scripts/recalbox-save-overlay.sh

i guess that your current overlay is corrupted.
can you recreated it.

the simplest way to to resize it to 100MB :
/recalbox/scripts/recalbox-save-overlay.sh 100
