You can either use a 2.5″ SSD internally (the UM690 supports one 2.5″ internal SATA Drive) or use a 2.5″ SATA to USB Adapter/Enclosure for your SSD. I guess m.2 SSDs will also work (either internally via m.2 Slot or via m.2 to USB Adapter/Enclosure) as well as 3.5″ drives.

How do you do to make UM690 launching Batocera or Windows? Do you change any settings?

For Batocera i use the SSD externally (via USB enclosure). I set BIOS to boot from USB first. Then i connect the external SSD, when i want to boot into batocera. And when i want to boot into Windows, i just unplug the external SSD, before powering on the UM690.

Just buy the cheapest you can find.
I bought some with USB-C connection.
Simply search for USB C 2.5″ SATA on ebay/amazon or other marketplaces. Should not cost more than 10-12€

joinski I don’t think it’s normal what it’s happening so I would like to ask you an advice.

When I disconnect the external SSD with Batocera for using Windows is all fine. However, next time I connect the external SSD for using Batocera… it does not boot. I need to boot from recovery options and after that Batocera is booting all the time the ssd is connect. As soon I disconnect the ssd for using windows I need to do the process again for booting Batocera. Is it something normal for you? Is your UM690 doing the same thing?

Yes, my UM690 does the same. As soon as i unplug the SSD drive (which is in a USB3 enclosure), then it boots into Windows, and when i plug the SSD (in USB3 enclosure) again and restart (either reboot or shutdown, and power up the system again) it boots into Windows, although i have USB set in BIOS as first boot device.
I then have to enter the BIOS and select the USB in Boot Override to boot into Batocera again.
I still don’t get it, why the UM690 behaves like this :( This is not normal. On other machines, if i set boot from USB first, then it always works, but not on the UM690.

Finally a solution was found! :) thanks to kamina (on batocera discord)
You have to manipulate the UEFI variables with a tool like EasyUEFI for example (description how to do it, with photos, see discord: https://discord.com/channels/357518249883205632/357954026916151298/1121194196238344193)
